The makers
The hands
behind the table
A place to belong is not an address. It is a feeling - and it travels.
We cook where the table is. In our own house, in yours, or somewhere neither of us has been before.

The team
Few hands, one standard.
Every plate passes through the same hands. That is the whole reason this works - and the reason we grow slowly.

Head Chef
Yannik Keitel
Küchenmeister. Works from the product outwards -season and region first, technique second. Balance over effect, and innovation only where the dish asks for it.

Head Chef
Thomas Zaniat
Brings the modern hand - craftsmanship, precision, clarity. Texture is his subject, and refinement the point at which he stops.

Sommelier
Marcus Doller
Chooses the wine that completes the dish rather than the one that agrees with it. Looks for tension, structure, and a clear sense of origin.

Founder & Editor

Started with a room and ended up with a language. To understand a culture there is no better place than a table with people around it. This is not a restaurant that also writes, but a way of thinking carried into words - and into your own home.

A culinary manifest
Through the Elements
Each dish in this journal is an invitation to explore and adopt from its origin and tradition to the way it is created and experienced.
Along the way, you uncover the background and the thinking behind it. From the making of a dish to the moment it is served, it becomes your story to tell, bringing a sense of chef’s craft into your own kitchen, to be shared with family, friends and guests.

Terroir
Where everything begins
It is the origin of a product, the depth of landscape, and the memory of tradition carried forward. We work with producers and winemakers who understand their craft not as production, but as a continuation of landscape, season, and tradition. Quality here is not defined by perfection but by character - by soil, by climate, and by the way a product is grown, harvested, and handled over time.
In Austria this knowledge runs deep. It is passed on through generations, refined by experience, and held in place by a strong attachment to where one is from. That is what gives a product its identity, and it decides how a dish will develop long before anyone lights a stove.
From farmers to winemakers, from regions to the restaurant, this is where identity is shaped long before it reaches the table.

Where origin becomes expression
We cook between tradition and modernity, guided by what a product needs rather than by rules. Most of our techniques are rooted in Austrian cooking; others come from a broader, contemporary view. What matters is not where a technique comes from, but how it is used.
We braise, ferment, roast, cure. We work with time, with temperature, with patience - to draw out depth, structure, and balance. Every element on the plate earns its place. We look for wines with tension and structure, carried by acidity and a clear sense of origin - wines that answer the character of a dish and hold it through to the end.
Wine belongs to the composition, not beside it. It is not chosen to match the dish but to complete it.
Experience the moment
Taste
Where time slows down
Plate and glass decide how it opens - how the aromas gather, how balance is experienced, how long a moment lasts. The composition of the plate tells the story. The glass in your hand becomes part of it: how it sits, how it carries the wine, how it lifts the taste. A meal is taken in with everything at once - taste, smell, sight, touch.
The room belongs to it too. Materials, colours, and textures make a kind of quiet that supports what is on the table without competing with it. Light sets the pace: soft, warm, and close, so the evening is allowed to slow down. Being together, unhurried, present. Because in the end taste is not only what you eat and drink, but the moment you keep.
Light, atmosphere, materials, and detail define how a moment is felt, how time slows down, and how people connect at the table.
